Poached Pear with Creme Anglaise
Serves 4
Ingredients
Poached Pear
5 pears, peeled and de-cored, leaving the stalk on
Juice of 1/2 an Orange
2 cups dry Red Wine
¼ cup Honey
2 tsp Sugar
1 Cinnamon Stick
1 Star Anise
Crème Anglaise
1 cup Cream
1 cup Milk
1/2 cup Sugar
2 Egg Yolks
1 tsp Vanilla Bean Paste
Method
Poached Pear
In a saucepan, combine orange juice, red wine, honey, sugar, cinnamon stick and star anise. Add peeled pears and cover using baking paper. Ensure your pears are covered with the wine mixture. Bring to a boil and reduce heat and simmer for 25 minutes. Check pears with a small wooden skewer or a fork to make sure they are cooked.
Crème Anglaise
Combine cream, milk, and vanilla bean paste in a heavy saucepan. Bring the milk mixture to a simmer. Remove from heat. Place ice in a bowl and then place another bowl on top ready for when the anglaise is ready. Whisk the sugar and egg yolks in a bowl until pale and fluffy. Gradually whisk hot milk mixture into yolk mixture. Strain the mixture into a clean saucepan. Return the saucepan to heat and stir until the mixture coats the back of a spoon, about 5 minutes (do not boil). Strain again into the cooled bowl on ice and allow to chill. Refrigerate to use later if required.
